Snickers Slice - Raw/Vegan

Who doesn't love a snickers and even better this one is raw, vegan and nutritious!


Ingredients:

Base:

2 cups pitted dates

1 cup almond flour or oats

1 cup nuts (I use cashews)

2 tbsp coconut oil

Pinch of salt

30g of vanilla protein powder

1 tsp vanilla extract (optional but I like my base to be super vanilla in taste)


Filling:

1 cup smoothie peanut butter

1/3 cup coconut cream

2 tbsp hulled tahini

1/2 cup maple or rice malt syrup

Pinch of salt


Topping:

150g melted dark chocolate

2 tbsp coconut oil

Method:

  1. Soak the dates in boiling water to soften for 5-10 minutes.

  2. Line a loaf tin with baking paper.

  3. Drain the water from the dates.

  4. In a food processor place all the base ingredients and blend until a dough like consistency forms (add a touch of water if it’s too dry or liquid sweetener or nut butter also works a treat).

  5. Press the dough into the tin and set aside in the fridge.

  6. Blend the filling ingredients together in a blender or food processor. When smooth and creamy pour on top the base. Set aside in the freezer for 1 hour.

  7. Melt the chocolate and mix in the coconut oil. Pour on top of the filling and set aside for 20 minutes in the fridge.

  8. Chop and serve! Best kept in a container in the fridge or freezer.
