Scorched Almond Bliss Balls

Vegan, RSF, GF, Paleo, DF, Low sugar** 


Ingredients

  • 1 cup blanched almond meal (or plain almond meal but might not be as fluffy)

  • 1/4 cup coconut cream

  • 3 tbsp coconut sugar (could opt for monk fruit sugar instead if you wish) 

  • 2 tbsp raw cacao powder 

  • 2 tbsp almond butter 

  • 2 tbsp chocolate protein powder (I used Two islands co)

  • 2 tbsp coconut oil melted 

  • 1 tsp salt 


For the centre and topping:

  • 1/2 cup roasted almonds 


Method

  1. In a large mixing bowl or food processor place all the ingredients in (excluding roasted almonds). Blend or stir until well combined and smooth. The mixture will be thick and sticky.

  2. Roll into balls and place a roasted almond in the centre so when you bite inside you get that crunch. 

  3. Decorate all balls with an almond on top.

  4. Place in the fridge to set for approx 1 hour (this allows them to harden up else they are softer - more cake like than fudgey)

  5. Store in a container in the fridge. 


Would also taste super yummy with a chocolate drizzle overtop!
