Who doesn't love a good caramel slice? Raw caramel slice was probably my first ever raw slice I made and loved - and for good reason! This slice is an OG and packed with nutritious ingredients - plus it's quick to prepare, requires no baking and so delicious!
1/2 cup blanched almond meal (or oats)
1/2 cup raw cashews
1/2 cup fine coconut
1/2 cup pitted dates (soak in boiling water to soften for 5-10min then drain)
2 tbsp coconut oil
Pinch of salt
3 cups pitted or Medjool dates (soak in boiling water to soften for 5-10min then drain)
1 cup cashews (softened in boiling water for 30 minutes then drain)
1/4 cup coconut oil melted
1 1/4 cups coconut cream (or milk)
3 tbsp hulled tahini
1 tsp vanilla extract
Optional: I love adding 1 serve (25g) of two islands co salted caramel protein powder.
200g melted dark chocolate
2 tbsp coconut oil melted
Line a baking tray with baking paper.
Place all base ingredients into a good blender or food processor until well combined and sticky. Press down into the baking tray. Set aside in fridge while you make the caramel.
Place the caramel ingredients into a blender or food processor and blend until smooth and creamy. Pour over the base ingredients. Set aside in the freezer for 1 hour.
Mix the melted chocolate and oil together then pour over the caramel layer. Place in the freezer for 2-3 more hours.
Chop up and serve!
