Peanut Butter Banana Oat Muffins

Banana, oats and peanut butter what a dreamy combo if you ask me! These muffins are packed with energy and nutritious ingredients, plus super simple to make!


2 medium overripe bananas, mashed (or 3 small)

4 tbsp Pics peanut butter

3 tbsp sweetener of choice (honey, maple syrup, rice malt syrup)

1/3 cup milk of choice (I used oat milk)

2 eggs

1 tsp vanilla extract

1 1/2 cups oat flour (or almond flour if GF)

1/2 cup almond flour

1 tsp baking soda and baking powder

1 tsp cinnamon

Optional: 1 serve (25g) Two islands co protein powder of choice

Optional: 1/2 cup choc chips


  1. Pre-heat oven to 180C bake.

  2. Place all measured ingredients into a food processor or good quality blender and blend until smooth and creamy.

  3. Pour into a muffin tray (I use a non-stick one but if yours isn’t then line with baking paper or oil).

  4. Bake for 16-20 minutes - until knife comes out clean.

  5. Drizzle PB overtop, chocolate or sprinkle some nuts. Store in an airtight container.
