Banana Lemon & Coconut loaf - Dairy and Gluten free*

I'm not kidding when I say make this loaf ASAP, it'll be a family favourite. It's so easy to make - simply put all ingredients into a blender and mix until well combined. Add icing on top or leave it as is, it pairs beautifully with greek yoghurt.


Ingredients:

3 ripe bananas

4 eggs

2 cups fine coconut

1 cup plain flour or almond meal for GF*

1/2 cup coconut oil (df) or butter melted*

3 heaped spoonfuls of honey

1 tsp baking soda

2 lemons zested

Juice from 1 lemon


Icing:

1/2 cup cream cheese

1/3 cup fine coconut

1 cup icing sugar

Zest from 1 lemon


Method:

  1. Pre-heat oven to 180C bake and line a loaf tin.

  2. In a food processor or blender place all measured ingredients (could also do in a bowl but mash banana first then add) and blend until well combined.

  3. Pour into the tray and bake for around 45 mins- 1 hour or until a knife comes out clean.

  4. Mix all icing ingredients into a bowl, add a dash of water if needed but it should mix through fine. Ice over the load and serve!
