100 and 1000's Biscuits - Vegan

I'm sure every Kiwi has grown up knowing and loving the classic 100 & 1000's biscuits, bright in colour, sweet and fun. This recipe is a more nutritious take on your classic biscuit while also being vegan friendly!


Ingredients:

Biscuit:

2 cups of white spelt flour

3/4 cup coconut sugar

1/2 cup coconut oil

1/4 cup almond milk

1 tsp baking soda

1 tsp baking powder

1 tsp vanilla extract

1/4 tsp salt


Icing:

1 cup icing sugar

1 tsp vanilla extract

1 tsp pink food colouring

2 tbsp margarine

1/2 cup 100’s and 1000’s sprinkles


Method:

  1. Pre heat the oven to 170C bake. Line a baking tray with paper.

  2. In a large bowl add oil and sugar and mix well. Then add the milk, vanilla extract and salt and mix until combined.

  3. Add the flour, baking powder and soda. Mix until smooth (I use a spatula for this step).

  4. Spoon the cookie dough on the tray making small balls then flatten down - with some distance between each as they will spread slightly.

  5. Bake for 10-12 minutes or until golden.

  6. Allow to cool on a cooling rack for 30 minutes as they will then harden up.

  7. Make the icing by melting the butter in a bowl then adding the icing sugar, vanilla, and food colour.

  8. Using a knife smother over the cookies and then cover the icing in sprinkles.

  9. Store cookies in an airtight container.
